Meatless Monday - Snow Day Edition

Brett shares a recipe for 1 pot Red Lentil Chili, perfect for a cold, snowy day. Lentils are a great source of protein, B vitamins, iron, zinc, magnesium, and potassium. They make a great meat alternative in dishes. The original recipe calls for black beans and corn (optional), and you can add cheese and sour cream (non-dairy to make it vegan), and jalapeños and avocado as well.
